Taj Bentota Resort & Spa will welcome Bombay Brasserie, Taj Dubai’s designer Indian kitchen, for a limited Diwali pop-up from 7 to 25 November. Led by Chef Pranav Upadhyay, Head Chef of Bombay Brasserie, Taj Dubai, the pop-up carries the colour, drama and festivity of Bombay to the shores of the Indian Ocean.
Where vibrancy, drama and festivity come alive
Bombay Brasserie celebrates the offbeat and embraces the flamboyant through exquisite multi-regional Indian cuisine. Its open kitchen showcases three time-honoured cooking traditions: tandoor for roasting, sigri for open grilling and tawa for hot searing. Premium ingredients, intricate marinades and sophisticated spice blends reinvent classic Indian dishes with creative flair.
The pop-up brings that philosophy to a Diwali celebration in Bentota, where the flavours of Bombay meet the beauty of the coast. It is built as a journey of flavours and a celebration of light, with tradition and modern innovation in balance.
A festival filled with flavour and light
Guests can expect the brand’s four pillars to come together over the Diwali season:
- Food: a menu that blends dishes from North to South India with a contemporary twist. Bombay Brasserie signatures include slow-cooked 24K gold Dal Makhini, Classic Samosa Chaat, Coastal Prawn Curry enriched with coconut and spices and Bamboo chicken biryani cooked in an ancient tribal method.
- Beverages: hand-crafted cocktails, boutique spirits and fine wines, with fresh juice mocktails and lassi with a twist for family tables.
- Experiences: a festive setting of Diwali décor and togetherness, with the open-kitchen theatre at its heart.
